If you like squash, this treat is excellent for a super easy to make, refreshing, rich, excellent side dish, appetizer or even a snack.
Preheat oven to 350 degrees
Ingredients:
2 or 3 Yellow summer squash, sliced in a casserole dish medium or large depending on your appetite
An onion
Chunk or crumbled feta cheese or goat cheese- at least 8 oz. though you might not use it all. Layer it with the squash.
Shredded cheddar cheese (optional) – not recommended at same time. One or the other.
Stick of butter – at least 1/4 lb. Add as you desire; you might not use it all.
Black pepper – just a sprinkle once you have mixed the other ingredients
If you like salt feel free to use some, but not too much, as the cheese and onion will spice it up for you

Slice the squash and fill your casserole dish with it.
chop a small onion, or half an onion if it is a larger onion, and mix in with the squash.
Add the feta cheese (I prefer crumbled, but have also used block feta cheese cut into small squares to dot the casserole throughout as you layer it in the dish.
Cut some pats of butter and put them in the layers with the feta cheese, and on top of the casserole. Depending on how much squash you are using you might be able to get away with a half stick of butter, but probably more, up to the whole stick.
Sprinkle some black pepper on top, lightly.
Bake in 350 oven until all of the ingredients have blended with the squash. Remove and enjoy.
